The Cuvée Evdemon 2016 of the Silver Estate swept the awards, after it was named best in show at Decanter 2020 and N.1 at the 50 Great Greek Wines 2020. Of course it was sold out immediately!
This wine is on the verge of how the Silver Estate understands the environment of Santorini.
Assyrtiko is selected from very old vineyards, biodynamically cultivated, at least 150 years old, in Pyrgos, with very low yields. It ferments in stainless steel tanks, at low temperatures and ages there for 30 months with wine sludge. At the same time, 25% of the wine ages for 12 months in large French oak barrels and then remains the rest of the time in stainless steel tanks. The Cuvee Evdemon Santorini Silver Estate focuses on the architecture of the structure in the mouth and takes several years in the bottle to bring out all its features. It is a wine with excellent aging potential for more than 15 years.
