Appassimento method. In late September to early October, the grapes selected on the hills are placed in traditional bamboo drawers.
By the end of January, the grapes have lost 35% of their weight and have increased their sugars.
After the grapes are pressed gently and the fermentation begins for 45 days in large oak barrels from the region of Slavonia in Croatia. This is followed by malolactic fermentation.
Aging 24 months in oak barrels for 1st and 2nd use, in small and large and then for at least 4 months in the bottle.
It can age for 15-25 years.
